At least 2 men named Amminadab appeared in the Bible - both Semitic.

Jacob > Judah > Perez > Hezron > Ram > Amminadab > Nahshon (while Moses was still alive)

Jacob > Levi > Kohath ... Amminadab (in the time of king David)

The lineage of a third man named Amminadab, Aaron's father-in-law, wasn't given. Exodus 6:23:
23. Aaron married Elisheba, daughter of Amminadab and sister of Nahshon, and she bore him Nadab and Abihu, Eleazar and Ithamar.

The Levite named Amminadab probably came from Kohath's son, Uzziel, when we look at 1 Chronicles 15:10 (below). Both verses 2 and 18 of 1 Chronicles 6 stated: "The sons of Kohath: Amram, Izhar, Hebron and Uzziel.".
Exodus 6:18,22:
18. The sons of Kohath were Amram, Izhar, Hebron and Uzziel. Kohath lived 133 years.
...
22. The sons of Uzziel were Mishael, Elzaphan and Sithri.

Kohath > Amram > Moses and Aaron
Kohath > Uzziel > Mishael, Elzaphan and Sithri

1 Chronicles 6:16-18,22:
16. The sons of Levi: Gershon, Kohath and Merari.
17. These are the names of the sons of Gershon: Libni and Shimei.
18. The sons of Kohath: Amram, Izhar, Hebron and Uzziel.
...
22. The descendants of Kohath: Amminadab his son, Korah his son, Assir his son,

Uzziel was verified as Aaron's uncle in Leviticus 10:4:
4. Moses summoned Mishael and Elzaphan, sons of Aaron's uncle Uzziel, and said to them, "Come here; carry your cousins outside the camp, away from the front of the sanctuary."

There may be some generations missing, but the Levite named Amminadab was listed in 1 Chronicles 15:10-11:
3. David assembled all Israel in Jerusalem to bring up the ark of the LORD to the place he had prepared for it.
4. He called together the descendants of Aaron and the Levites:
5. From the descendants of Kohath, Uriel the leader and 120 relatives;
6. from the descendants of Merari, Asaiah the leader and 220 relatives;
7. from the descendants of Gershon, Joel the leader and 130 relatives;
8. from the descendants of Elizaphan, Shemaiah the leader and 200 relatives;
9. from the descendants of Hebron, Eliel the leader and 80 relatives;
10. from the descendants of Uzziel, Amminadab the leader and 112 relatives.
11. Then David summoned Zadok and Abiathar the priests, and Uriel, Asaiah, Joel, Shemaiah, Eliel and Amminadab the Levites.

From Exodus 6:22, we can deduce that Amminadab's ancestor was one of the 3 sons of Uzziel. That was the only occurrance of Sithri. Leviticus 10:4 was the second instance of Elzaphan, but no others could be found of him. If the person named Mishael in Nehemiah 8:4 is Uzziel's son, then Amminadab the Levite would be a descendant through him. There was also someone named Mishael in the book of Daniel during the Babylonian exile; but, this could have been someone from an entirely different lineage.

Nehemiah 8:4:
4. Ezra the scribe stood on a high wooden platform built for the occasion. Beside him on his right stood Mattithiah, Shema, Anaiah, Uriah, Hilkiah and Maaseiah; and on his left were Pedaiah, Mishael, Malkijah, Hashum, Hashbaddanah, Zechariah and Meshullam.

At least a little more is known of Amminadab, the descendant of Judah through Perez, because he's listed in the geneaology of Jesus.

Amminadab's son, Nahshon, repeatedly was mentioned in Numbers 1:7; 2:3; 7:12-17; 10:14 as well as the following passage.

1 Chronicles 2:10:
1. These were the sons of Israel: Reuben, Simeon, Levi, Judah, Issachar, Zebulun,
2. Dan, Joseph, Benjamin, Naphtali, Gad and Asher.
3. The sons of Judah: Er, Onan and Shelah. These three were born to him by a Canaanite woman, the daughter of Shua. Er, Judah's firstborn, was wicked in the LORD's sight; so the LORD put him to death.
4. Tamar, Judah's daughter-in-law, bore him Perez and Zerah. Judah had five sons in all.
5. The sons of Perez: Hezron and Hamul.
6. The sons of Zerah: Zimri, Ethan, Heman, Calcol and Darda --five in all.
7. The son of Carmi: Achar, who brought trouble on Israel by violating the ban on taking devoted things.
8. The son of Ethan: Azariah.
9. The sons born to Hezron were: Jerahmeel, Ram and Caleb.
10. Ram was the father of Amminadab, and Amminadab the father of Nahshon, the leader of the people of Judah.

In addition to Amminadab in Matthew 1:4 and Luke 3:33, Ruth 4 listed him as an ancestor of Jesus through David's line.

Ruth 4:18-22:
18. This, then, is the family line of Perez: Perez was the father of Hezron,
19. Hezron the father of Ram, Ram the father of Amminadab,
20. Amminadab the father of Nahshon, Nahshon the father of Salmon,
21. Salmon the father of Boaz, Boaz the father of Obed,
22. Obed the father of Jesse, and Jesse the father of David.
